INGREDIENTS

  • 2 lb. fresh asparagus
  • 1/4 c. margarine or butter
  • 1/4 c. flour
  • 3/4 c. milk
  • 3/4 c. cream
  • 2 hard-boiled eggs, minced
  • 2 tbsp. fresh lemon juice

DIRECTIONS

  • Cook the asparagus in boiling, salted water until tender, then drain. Keep warm.
  • Melt the margarine in a saucepan. Add the flour and mix well. Stir in the milk and cream and cook, stirring constantly, until smooth and thick.
  • Reserve 1 teaspoon egg.
  • Add remaining egg to sauce and mix well. Place the asparagus in a serving dish and sprinkle with lemon juice. Place the cream sauce in a serving bowl and sprinkle with reserved egg.
