INGREDIENTS

  • 2 chicken backs, cut in half crosswise
  • 1 cup House-Autry Chicken Seasoned Breading Mix
  • oil, for frying

DIRECTIONS

  • Since chicken backs are not normally sold in stores, use backs from disjointing whole chickens. Cut the backs crosswise to make two equal portions from each back.
  • Fill a large pot with enough oil to cover the four back portions once they are placed into the oil. An instant read thermometer which can be clipped to the side of a large pot with the probe in the oil is ideal for frying anything. Heat the oil to 375°F.
  • While the oil is heating, place the breading into a plastic bag which is used to place produce in the grocery. Pat dry the back portions. Place one or two back portions into the bag, seal the bag by twisting the top shut and gently toss the back portions to coat with breading. Repeat with the remaining portions.
  • Carefully place the back portions into the hot oil. Turn the heat to high. After the backs have been in the oil for about 30 seconds gently move them around to prevent them from sticking together. Set a timer for 14 minutes.
