INGREDIENTS

  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • Yolks of 2 eggs, beaten, reserve whites
  • 1 3/4 cup whole milk
  • 4 tbsp melted shortening or butter

DIRECTIONS

  • Sift together all dry ingredients and mix well.
  • Add the egg yolks, milk, and melted shortening to the dry mixture. Stir all to mix well and until the mixture is smooth with no lumps.
  • Beat the egg white to make a meringue. Fold the meringue into the batter.
  • Cook waffles according to your waffle iron instructions. Hold cooked waffles in warm oven while remaining waffles are cooked.
