INGREDIENTS

  • 1 chicken, about 3 1/2 pounds, cutup
  • 1/2 cup butter or margarine
  • 1 teaspoon salt
  • 8 cloves garlic
  • 1/2 cup chopped parsley

DIRECTIONS

  • Melt half of butter in heavy skillet or Dutch oven. Place chicken in skillet and brown on all sides over low to medium heat. Sprinkle with salt.
  • Mash garlic with fork or put through garlic press. Combine with remaining butter, chopped parsley. and cream all ingredients well. Add to chicken.
  • Cover and cook over low heat until tender. about 30 to 40 minutes. During cooking turn chicken occasionally and spoon sauce over it. Serve sauce with chicken. Serves 4.
