INGREDIENTS

  • 1 lb. chicken breast, boneless, skinless, in strips
  • 1/4 tsp table salt
  • 4 tsp canola oil, divided
  • 3 scallions, sliced on diagonal (plus extra for garnish)
  • 1 1/2 cups pineapple, cut into 1-in cubes
  • 1 medium red bell pepper, cut into 1-in pieces
  • 1 serrano chili pepper, seeded and minced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/2 tsp five-spice powder
  • 2 1/2 tbsp less sodium soy sauce

DIRECTIONS

  • Sprinkle chicken with salt. Heat 2 tsp oil in wok or large skillet over medium-high heat. Add chicken, in batches, and stir-fry until cooked through and well browned, about 5 minutes. Transfer to plate.
  • Add remaining 2 tsp oil to wok. Add scallions, pineapple, bell pepper, and chile, and stir-fry until vegetables are crisp-tender, about 3 minutes.
  • Add garlic, ginger, and five-spice powder and stir-fry until fragrant, about 1 minute.
  • Add chicken and soy sauce to wok and stir-fry 1 minute. Remove from heat and sprinkle with remaining scallion.
