INGREDIENTS

• 1 cup yellow onion, diced
• 1 1/2 pounds chicken breasts, boneless and skinless
• 1 (10.5-ounce) condensed cream of chicken soup
• 2 (0.87-ounce) packets chicken gravy mix
• 1/3 cup water
• 1/2 teaspoon ground sage
• 1/2 teaspoon pepper
• 1 teaspoon parsley flakes
• mashed potatoes, optional, cooked, for serving

DIRECTIONS

• Grease the inside of a slow cooker. Pour the onions into the slow cooker. Place the chicken breasts in a single layer on top of the onions.
• In a mixing bowl, add the cream of chicken soup, the gravy mix, the water, the sage, the pepper, and the parsley, whisking well to combine. Pour the soup mixture over the chicken in the slow cooker.
• Cover the slow cooker and cook until the chicken is cooked through (165°F) and tender, about 3 hours on low heat. Best to verify temperature with an instant read thermometer. Stir the mixture well, breaking the chicken apart as you stir.
• Serve with the mashed potatoes.
