INGREDIENTS

  • 1/4 cup Greek yogurt
  • 1/2 tsp lemon zest, finely grated
  • 1/2 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp Kosher salt, or to taste
  • 1 pinch black pepper
  • 6oz tuna packed in water, well drained
  • 1/4 cup roasted red peppers, packed in water, chopped, well-dried
  • 3 tbsp shallot, chopped, minced
  • 2 tbsp celery, minced
  • 2 tbsp dill, chopped
  • Lettuce, optional
  • 4 slices wheat bread, toasted, optional

DIRECTIONS

  • Combine yogurt, zest, juice, mustard, salt and pepper in a small bowl; set aside.
  • Toss together tuna, roasted peppers, shallot, celery and dill; stir in dressing and toss to combine.
  • Make lettuce wraps by spooning the tuna salad into large Bibb lettuce leaves. Or serve with crackers or toasted wheat bread.
  • Serving size: 1/2 cup.
