INGREDIENTS

  • 1/2 lb. frozen green beans
  • 1 tsp lemon zest, grated
  • 2 tbsp fresh lemon juice
  • 2 tsp unsalted butter
  • 1/4 tsp table salt
  • 1 pinch black pepper
  • 2 cloves garlic, finely chopped
  • 2 plum tomatoes, cut into thin wedges
  • 1 yellow bell pepper, thinly sliced
  • 1/4 medium Vidalia onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup reduced fat feta cheese, crumbled
  • 2 cups unsalted chicken or vegetable broth

DIRECTIONS

  • In large saucepan, melt butter over medium heat and cook, stirring often, until foamy and light golden brown, about 1 minute.
  • Add onion, bell pepper, garlic, and pinch each of salt and black pepper and cook, stirring constantly, until aromatic, about 1 minute.
  • Add green beans and broth. Add another pinch of salt and bring to boil. Reduce heat to simmer. Cover with lid slightly ajar and cook, stirring occasionally, until beans are cooked to desired doneness, about 20 minutes for very tender.
  • Meanwhile, whisk together lemon zest and juice, salt, and black pepper in medium bowl. Add to beans. Stir to mix well. Add tomatoes and mint and stir well to combine and heat tomatoes through. Sprinkle with cheese. Serve.
