INGREDIENTS

  • 1 1/2 pounds fresh green beans
  • 1 tsp salt
  • 2 quarts boiling water
  • 1/4 cup chopped onion
  • 2 Tbl olive oil
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 Tbl chopped fresh mint or basil leaves
  • 3 Tbl wine vinegar

DIRECTIONS

  • Wash beans and break off ends. Leave whole or cut as desired.
  • Add 1 teaspoon salt to boiling water, stir in beans, cover, and bring to boiling. Cook 10 minutes, or until crisp tender.
  • While beans are cooking, saute onion in olive oil until transparent (about 8 minutes). When beans are done cooking, drain and add to onion. Season with 1/2 teaspoon salt and the pepper.
  • Add mint leaves (or basil leaves) and vinegar; toss gently. Serve while hot.
