INGREDIENTS

  • Cooking spray
  • 4 medium scallions, sliced, plus additional for garnish
  • 1/2 cups cilantro, packed fresh leaves
  • 4 cloves garlic, peeled
  • 1/2 cup cilantro, packed fresh leaves
  • 1 medium lime, grated zest and juice
  • 4 tsp olive oil
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 lime, cut into wedges
  • 1 tsp fresh grated ginger, peeled
  • 4 5oz chicken breast skinless, boneless
  • 1/2 tsp table salt
  • 1/4 tsp black pepper

DIRECTIONS

  • Spray grill rack with nonstick spray. Preheat grill to medium or prepare medium fire.
  • Combine 4 scallions, cilantro, garlic, lime zest and juice, oil, cumin, paprika, and ginger in mini-food processor and process until coarse paste forms. Rub paste all over chicken. Let stand 10 minutes.
  • Place chicken on grill rack and grill, turning occasionally, until chicken is cooked through, about 10 minutes. Sprinkle with salt and pepper. Arrange chicken on platter and garnish with remaining scallions and lime wedges.
  • Serving size: 1 chicken cutlet.
