INGREDIENTS

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Grated rind of 1 lemon
  • 2 tablespoons crushed fennel seed
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • 3 pounds jumbo shrimp, shelled and deveined
  • 30 cherry tomatoes
  • Additional lemon juice
  • Toasted Bread Rounds

DIRECTIONS

  • In a large bowl whisk together olive oil, lemon juice, lemon rind, fennel seed, garlic, and salt and pepper. Stir in shrimp, cover, and marinate in the refrigerator for 3 to 4 hours, or overnight.
  • Preheat broiler or prepare a charcoal fire. Thread each of 30 skewers with a shrimp, a cherry tomato, and another shrimp. Broil or grill until shrimp are bright pink and fairly firm; do not overcook.
  • Sprinkle with a little more salt and pepper and brush with a little lemon juice. Pile skewers on a platter and serve with Toasted Bread Rounds.
