INGREDIENTS

  • Cooking spray
  • 1 medium onion, thickly sliced
  • 1 medium yellow squash, sliced lengthwise
  • 1 pinch table salt
  • 12 oz lean flank steak
  • 1 pinch black pepper
  • 1/2 cup salsa
  • 4 8" flour tortilla

DIRECTIONS

  • Preheat grill or grill pan to medium-high.
  • Lightly coat onion and squash with cooking spray and season with salt. Grill vegetables until soft, about 5 minutes.
  • Meanwhile, season steak with salt and pepper on both sides, and grill until cooked through, 3 to 6 minutes depending on desired degree of doneness. Remove steak from grill and slice into thin pieces against the grain.
  • To assemble fajitas, spoon 2 tbsp salsa onto each tortilla. Top each with 1/4 of onions, squash, and steak. Serve. Serving size: 1 fajita.
