INGREDIENTS

  • 1 1/2 lbs. lean ground beef 1 1/2 cup mozzarella, shredded
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 (15 oz.) can tomato sauce
  • 1 (15 oz.) can stewed tomatoes
  • 1 tsp. oregano
  • 1 tsp. Italian seasoning
  • salt/pepper, to taste
  • 10 oz. fresh or frozen spinach, thawed
  • 16 oz. bow tie pasta, cooked
  • 1/2 cup Parmesan cheese, shredded
  • 1 1/2 cup mozzarella, shredded

DIRECTIONS

  • Prepare pasta according to package instructions. Once pasta is cooked, drain and return to pot.
  • While the pasta is cooking, in a large oven proof skillet, brown ground beef over medium heat. Drain meat to remove rendered fat. Remove meat from skillet and set aside.
  • Preheat oven to 350°F. Place the skillet over medium heat and sauté until translucent. Add the garlic and cook for 1 minute. Add the onion to the pot with the pasta and gently stir to mix well. Add the meat to the pasta and gently stir to mix well. Add all of the other ingredients, reserving 1/2 cup of the mozzarella cheese, to the pot, individually, gently stirring to mix after each addition.
  • Place the contents of the pot into a 3 quart oiled casserole dish. Place the casserole into the oven on the middle rack and bake for 30 minutes. After 30 minutes, spread the 1/2 cup of reserved mozzarella cheese over the top of the casserole and return to the oven for 5 minutes or until the cheese has melted.
