INGREDIENTS

  • 6 slices halibut, 3/4 inch thick
  • 1/4 cup butter or margarine
  • 2 tablespoons oil or fat
  • 1 cup chopped celery
  • 1 small onion, chopped
  • 1 green pepper, finely chopped
  • 1 clove garlic, finely chopped
  • 1 No.2 can tomatoes
  • Salt and pepper

DIRECTIONS

  • Pan-fry halibut in butter until nicely browned on all sides.
  • In another skillet, pan-fry celery, onion, green pepper, and garlic in oil or fat until green pepper is tender and, onion is golden. Add tomatoes and cook until liquid is reduced and thickened.
  • Arrange halibut in shallow casserole. Pour tomato mixture over halibut. Season with salt and pepper.
  • Cook in moderate oven (350°F.) 15 to 20 minutes. To serve, garnish with parsley.
