INGREDIENTS

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 can (14 1/2-ounces)diced tomatoes, drained
  • 1 tsp. chili powder
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 cups frozen mixed vegetables
  • For Topping:
  • 3 cups frozen shredded hash brown potatoes thawd, drained
  • 1 cup (8 ounces) shredded cheddar cheese
  • 1 egg
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

DIRECTIONS

  • In a large skillet, cook beef, onion and garlic until beef is no longer pink - drain.
  • Stir in tomatoes, chili powder, oregano, salt and pepper - mix well. Stir in vegetables, mix well.
  • Pour into a 9-inch x 9-inch 3 qt. casserole dish. Combine topping ingredients and spoon evenly over the meat mixture.
  • Bake, uncovered, at 400°F for 30 minutes.
