INGREDIENTS

  • 1/3 cup Hoisin sauce
  • 1/4 cup ketchup
  • 1 tbsp dry sherry
  • 1 tsp garlic powder
  • 2 tsp Chinese Five Spice powder
  • 2 tsp ground ginger
  • 12 chicken drumsticks or combination of legs and thighs
  • To make Chinese Five Spice:
  • 2 tsp Sichuan peppercorn
  • 5 to 6 star anise
  • 1/2 tsp ground cloves
  • 1 tbsp ground Chinese cinnamon
  • 1 tbsp ground fennel seeds

DIRECTIONS

  • To make Chinese Five Spice: Heat peppercorns in a dry skillet over low to medium heat until fragrant, about 3 minutes. Place peppercorns and star anise into a grinder or pepper mill and grind. Strain powder through a fine mesh to remove any large pieces of peppercorn or star anise. Combine the peppercorn and star anise mixture with the remaining spices and mix well to combine.
  • Combine first 4 ingredients.
  • Combine five spice powder and ginger. Sprinkle over chicken pieces. Grill on direct medium heat for about 35 minutes, turning occasionally and brushing with hoisin mixture, until internal temperature reaches 170°F.
  • Serve with rice.
