INGREDIENTS

  • For the Rice:
  • 1 tablespoon butter or margarine
  • 1 cup long-grained rice
  • 2 to 3 teaspoons curry
  • 2 cups water
  • 1 teaspoon salt
  • For Dish:
  • 2 tablespoons butter or margarine
  • 2 teaspoons curry
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 small fresh cucumber
  • Chutney
  • 3 eggs

DIRECTIONS

  • Melt the butter or margarine in a saucepan. Stir in curry, then the rice until rice is well coated with curry. Pour on cold water, add salt and bring to a rapid boil while stirring. Put cover on saucepan and let rice boil over a very low heat for 20 minutes. Remove pan from heat and fluff it with two forks.
  • Meanwhile brown butter or margarine in a large, heavy frying pan. Put the ground beef in the pan, crumble it with a wooden fork and let meat brown while stirring. Season with salt, pepper and curry.
  • Rinse and cut the cucumber into 1/4-inch long strips. Stir the cucumber strips into the meat mixture and stir carefully with two forks.
  • Stir in the rice and toss gently. Make 3 dents in the mixture and slip 3 eggs slowly into the dents. Let pan stand on a low heat covered until the eggs have set, about 10 minutes. Serve with chutney and a fruit salad.
