INGREDIENTS

  • 1/2# smoked (andouille) sausage, casing removed, cut in 1/4" rounds
  • 2 grilled chicken breasts, chopped into bite-size pieces
  • 1/2# peeled and deveined shrimp (optional)
  • 1/4 C bell pepper, chopped
  • 1/4 cup celery, chopped
  • 1 can (14.5oz) diced tomatoes
  • 8oz can tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 2 1/2 cups chicken stock
  • Jambalaya mix (search recipes)

DIRECTIONS

  • In heavy pot, combine Jambalaya mix, chicken stock, tomatoes, tomato sauce, smoked sausage, Worcestershire sauce, bell pepper and celery. Cover and bring to boil over med-high heat. Reduce heat and simmer for 20 minutes.
  • Once rice is done, add cooked chicken and heat through.
  • Add shrimp and cook for another 3 minutes. Serve.
