INGREDIENTS

  • 1 1/2 lb. chicken tenders or 2 boneless chicken breasts
  • House Autry Chicken Breading (preferred) or all-purpose flour
  • Vegetable oil for deep frying
  • Accompaniment: honey mustard dipping sauce

DIRECTIONS

  • (A chicken tender or strip is the tubular piece of meat between the rib cage and actual breast meat. It seems to be part of the breast but at the same time separate from the breast meat.)
  • If actual tenders are not available, use boneless chicken breast and cut them length-wise into long 1 1/2 inch wide strips.
  • Heat enough oil in a large pot to allow the tenders to be placed into the oil without touching the bottom of the pot. Heat the oil to medium-high. The oil is hot enough when a pinch of breading dropped into the oil sizzles or when a thermometer reaches 350°F.
  • Place the moist chicken tenders or strips into the breading and coat well. Place the breaded tenders into the oil as if trying to lay them out flat, being careful to prevent splashing and space the tenders as much as possible to prevent touching. Once all tenders are in the oil, gently stir the tenders to ensure they are separated. Cook for 2 1/2 minutes. (Be careful! Don't overcook.) Remove from oil and drain on paper towels.
