INGREDIENTS

  • 1 3 to 4 pound whole chicken, no giblets
  • salt and pepper

DIRECTIONS

  • Preheat oven to 425°F. Wash the chicken and pat dry.
  • Cut a 3 inch slit in the skin along the loose skin between the thigh and the breast. Cut both sides of the chicken. Slit just the skin and do not cut into the meat. Salt and pepper all parts of the chicken to include under wings and back.
  • Place the chicken, breast up, into a heavy cast iron skillet or onto a roasting pan.
  • Bake for 1 hour 20 minutes. Check whether the chicken is done by (1) cutting into the thigh well below where the slit was made in the skin. The juices should run clear, OR (2) insert a thermometer into the inner thigh meat. The temperature should be right at 170°F to be done. If the juices do not run clear, or if the temperature is not very near 170°F, return to the oven for 5 minutes and check again. Repeat 5 minute intervals until chicken is done. Let chicken rest for 15 minutes before service.
