INGREDIENTS

  • 2 lb chicken thighs, boneless and skinless
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup cornstarch
  • Oil, for frying
  • 1/3 cup Korean gojuchang hot sauce
  • 3 Tbl rice vinegar
  • 1/4 cup brown sugar
  • 2 Tbl soy sauce
  • 1 tsp sesame seeds for garnish

DIRECTIONS

  • Cut deboned chicken into 1-inch cubes. Toss chicken in flour to coat well. Dredge chicken in eggs and finally coat with cornstarch.
  • In large glass bowl, add the gojuchang, vinegar, brown sugar and soy and whisk to combine well.
  • Heat 3-inch of vegetable oil in heavy bottomed pan to 375 degrees F. Fry chicken 3 to 4 minutes until brown and crispy.
  • Drain chicken and add to bowl of sauce. Toss to coat well. Serve on rice and garnish with sesame seeds.
