INGREDIENTS

  • Up to 2 cups mashed potatoes
  • 1 Tbl. ground thyme
  • 1/2 tsp. ground rosemary
  • 1/2 tsp. ground basil
  • 1 Tbl. ground marjoram
  • 1/4 tsp. ground sage
  • 1/4 tsp. fennel
  • 1 egg, beaten
  • 1 1/2 cup bread crumbs

DIRECTIONS

  • Preheat oven to 375°F. Place the potatoes in a large mixing bowl. Add the egg and mix well.
  • Add remaining ingredients, except for bread crumbs, to the potatoes and mix well. Pour the bread crumbs into a flat bottom bowl which is large enough to accommodate a potato patty.
  • Line a sheet pan with parchment paper. Take about a cupped palm full of potatoes and form into a patty. Place the patty into the bowl of bread crumbs gently pressing to coat the patty with crumbs. Flip the patty over and coat the other side. Gently roll the edges of the patty in the crumbs to coat. Place each breaded patty onto the sheet pan leaving about an inch between patties. Repeat to use all of the potato mixture.
  • Place the sheet pan of potato patties into the oven and bake for 45 minutes. Serve hot.
