Leg of Lamb with Chipotle Barbecue Glaze Recipe marinates lamb with rub of garlic, Dijon mustard, thyme and olive oil then grills while basting with Chipotle BBQ Glaze of chili sauce, molasses, soy sauce, brown sugar and Worcestershire sauce.

INGREDIENTS

  • 1 Leg of Lamb
  • For lamb rub:
  • crushed garlic
  • 2 tbl. Dijon mustard
  • 6 fresh thyme sprigs
  • olive oil and salt and pepper
  • For Chipotle BBQ Glaze: 1 1/2 cups chili sauce
  • 1/4 cup molasses and 1/4 cup water
  • 1 tbl. soy sauce
  • 1 tbl. brown sugar
  • 1 tbl. Dijon mustard
  • 2 finely chopped garlic cloves
  • 2 tbl. lemon juice
  • 2 tsp Kosher salt
  • 1 tsp. pepper sauce (Tabasco)
  • 1 tsp Worcestershire Sauce
  • 1 tsp. chili flakes
  • Add jalapeno and poblano peppers, to taste
  • 1 chipotle pepper (dried jalapeno)

DIRECTIONS

  • Lightly coat lamb with olive oil. Rub lamb with crushed garlic. Smear with mustard. Drape lamb with thyme sprigs. Marinate meat for 5 to 6 hours or overnight. After marinating, salt and pepper to taste.
  • Combine all Chipotle BBQ Glaze ingredients. Stir well to mix. Place in suitable pot and simmer about 15 minute.
  • Grill leg of lamb using your personal grilling techniques. (Start grilling lamb skin side down.) For best results a thermometer should be used to check the internal temperature of the lamb. Baste the L of L occasionally with the Chipotle Glaze while cooking.
  • (An internal temperature of 145°F means that the meat will be at a medium-well doneness, and this is the official safe temperature recommended by the USDA.) The meat will continue to cook once removed from heat and the temperature can be expected to rise another 10°F once removed from heat. Let L of L rest for 10 to 15 minutes before slicing. Serve with Chipotle BBQ Glaze.
