INGREDIENTS

  • 2 lbs chicken breast
  • 8 potatoes
  • 1/3 cup Olive Oil
  • 1 1/2 tsp salt
  • 1 tbsp fresh Ground Pepper
  • 1 tbsp Paprika
  • 2 tbsp Garlic Powder
  • 6 tbsp Hot Sauce
  • For Topping:
  • 2 cups Shredded Cheese
  • 1 cup crumbled Bacon
  • 1 cup diced Green Onion

DIRECTIONS

  • Preheat oven 400F. In a large bowl combine and mix well the olive oil, salt, pepper, paprika, garlic powder, hot sauce. Coat a 9x13 baking dish with cooking spray.
  • Cube the potatoes and add to the bowl. Toss the potatoes to completely coat with the olive oil mixture. Place the potatoes into the baking dish and bake for 45 minutes, stir every 15 minutes.
  • Cube the chicken and add it to the bowl with any left over sauce. Mix together cheese, bacon & green onion in a small separate bowl.
  • Once potatoes are done, add the uncooked marinated chicken to the baking dish and gently stir to combine chicken with potatoes. Layer the crumbled bacon and green onion over the potatoes and chicken. Bake for 10 minutes. Top all with the shredded cheese. Return baking dish to the oven for an additional 5 minutes.
