INGREDIENTS

  • 2 T lower-sodium soy sauce
  • 2 T honey
  • 2 cloves garlic, pressed
  • 2 t grated peeled fresh ginger
  • 1 1/2 lbs. chicken thighs, fat trimmed
  • 1 bunch green onions, cut into 2-in. lengths
  • 1 lb. broccoli florets
  • 2 T vegetable oil
  • 1/8 t salt

DIRECTIONS

  • Line 2 rimmed baking sheets with foil. In large bowl, whisk soy sauce, honey, garlic and ginger. Add thighs and onions; toss to coat.
  • Arrange chicken, skin side up, and onions on 1 prepared baking sheet.
  • On other baking sheet, toss florets with vegetable oil and salt; arrange in single layer.
  • Roast chicken and broccoli in 450°F. oven 30 minutes or until chicken is cooked through (165°F.) and broccoli is tender.
