INGREDIENTS

  • 5 cups (about 1/2 lb) sandwich bread, cut into 1/2-inch cubes
  • 1/2 cup potato starch
  • 1/2 cup sorghum flour
  • 2 tbsp chickpea/garbanzo bean flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp xanthan gum
  • 1/4 tsp salt
  • 1 1/2 cups unsweetened rice or coconut milk beverage
  • 6 tbsp extra-light olive oil or canola oil
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract

DIRECTIONS

  • Preheat oven to 350° F and lightly grease six 4-ounce ramekins. Place bread cubes, starch, flours, baking powder, cinnamon, xanthan gum and salt in a large bowl and toss to evenly distribute ingredients.
  • In a medium bowl, whisk together milk beverage, oil, maple syrup and vanilla. Pour over bread mixture and gently stir to combine. Let bread soak 10 minutes.
  • Divide the bread mixture among the ramekins and spread to even out.
  • Bake 25-30 minutes, or until golden brown. Cool 15 minutes before serving. Leftovers can covered and refrigerated for up to 7 days.
