INGREDIENTS

  • 1 chicken (3 pounds)
  • Salt and pepper
  • 1 cup flour
  • 2 eggs, slightly beaten
  • 4 tablespoons water
  • 1 cup dry breadcrumbs
  • 1/4 cup butter or margarine
  • 1/4 cup lard

DIRECTIONS

  • Cut chicken in pieces for serving, wash and dry. Season with salt and pepper, roll in flour, dip in slightly beaten eggs, diluted with water; and roll in crumbs.
  • Saute in butter and pork fat in heavy frying pan until browned on all sides; cover and place in slow oven (300°F.) 1/2 to 3/4 hour. or until tender.
  • If chicken weighs more than 3 pounds, add 1/2 cup hot water to pan in oven. Serve with cream gravy made from drippings in pan.
  • Chicken Cream Gravy: To 4 tablespoons of drippings add 4 tablespoons of flour. Stir until blended. Slowly add 2 to 3 cups of milk or half milk and half cream. Heat slowly over low heat, stirring constantly until thick and smooth. Season to taste.
