INGREDIENTS

  • 1/2 pound white cabbage, shredded (about 2 cups)
  • 1/2 pound red cabbage, shredded (about 2 cups)
  • 1/2 pound assorted greens, such as mustard greens, collards, or spinach, trimmed, washed and shredded
  • 1 cup thinly sliced red onions
  • 1 cup chopped green onions, green part only
  • 1/2 cup chopped parsley leaves
  • 1 1/4 cups mayonnaise
  • 1/4 cup Creole or whole grain mustard
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne
  • 2 teaspoons sugar

DIRECTIONS

  • Mix all vegetables and toss well.
  • Mix all dry ingredients and mix well.
  • Combine mayonnaise and mustard and mix to blend. Add the dry ingredients to the mixture and incorporate by mixing well.
  • Spread the mayonnaise mixture around on the greens and toss to coat all vegetable surfaces with the mayonnaise mixture. Serve.
