INGREDIENTS

  • For 9-inch Pie:
  • 3 egg whites
  • 1/4 tsp. salt
  • 6 Tbl. sugar
  • 1/2 tsp. flavoring (optional)
  • For 8-inch Pie:
  • 2 egg whites
  • 1/4 tsp. salt
  • 4 Tbl. sugar
  • 1/4 tsp. flavoring (optional)

DIRECTIONS

  • (Note: egg whites should be at room temperature to whip up fluffy, but eggs separate easier when cold.)
  • Beat egg whites with salt until frothy.
  • Then beat in sugar, 1 tablespoon at a time. Beat until meringue is stiff and glossy. The meringue is ready for use when the sugar is dissolved and the meringue is stiff enough to hold a peak, yet still looks moist.
  • Add flavoring, vanilla for example, if desired. Beat only enough to blend.
