INGREDIENTS

  • 2/3 cup chopped onion
  • 1 tablespoon butter or margarine
  • 1 cup long-grain rice, uncooked
  • 1 cup chopped green pepper
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 (8 oz) can tomatoes, diced
  • 2 cups water

DIRECTIONS

  • Saute onion in margarine until tender.
  • Stir in rice and remaining ingredients; stir to mix well.
  • Bring to boil; reduce heat, cover, and simmer 20 minutes or until rice is tender and liquid is absorbed.
