INGREDIENTS

  • 1 cups plus 2 tablespoons Basic Oats (below)
  • 1/4 cup sugar
  • 1 cup milk
  • 1 egg, beaten
  • Basic Oats Mix:
  • 6 cups sifted all-purpose flour
  • 1/4 cup (4 tablespoons) baking powder
  • 4 teaspoons salt
  • 1 1/3 cups shortening
  • 2 cups quick or old fashioned oats, uncooked

DIRECTIONS

  • For Basic Oats Mix: Sift flour, baking powder, and salt together into large bowl. Cut in shortening until mixture resembles coarse crumbs. Stir in oats.
  • Store mixture in an airtight container in a cool, dry place until ready to use.
  • For Muffins: Combine Oats Mix and sugar in a bowl. Add milk and egg; stir until just blended. Fill 12 greased 2 1/2-inch muffin-pan wells 2/3 full.
  • Bake at 400°F about 20 minutes, or until golden brown.
