INGREDIENTS

  • 1 whole chicken, cut-up and disjointed
  • 2 cups plus 6 Tbl buttermilk
  • 3 cups flour
  • 3 Tbl white pepper
  • 1 Tbl black pepper
  • 1 Tbl celery salt
  • 1 Tbl garlic powder
  • 1 Tbl ginger, ground
  • 1 Tbl Italian seasoning
  • 1 Tbl baking powder
  • 1 Tbl plus 1/2 tsp salt
  • 1 1/2 quarts vegetable oil

DIRECTIONS

  • Combine 2 cups buttermilk and 1 tablespoon of salt in a large container. Place chicken pieces into buttermilk and move around in buttermilk to coat well. Marinate chicken at least one hour but preferably overnight in the refrigerator.
  • Combine flour, peppers, celery salt, garlic powder, ginger, Italian seasoning, baking powder and 1/2 tsp salt and mix well to combine. Add 6 Tbl buttermilk to the flour mixture and mix well. Place individual pieces of chicken into the flour mixture and coat well. After all chicken has been breaded with flour mixture, place into refrigerator for at least one hour.
  • Place the vegetable oil into a large skillet and place on medium-high heat. Bring the oil to a temperature of 350°F.
  • When chicken has chilled for at least one hour and oil has reach temperature, carefully place chicken into the hot oil, skin side down. Cover and cook for 5 minutes. Rotate skillet 180 degrees. Continue to cook chicken for another 5 minutes. Turn chicken over and cook for another 3 minutes. Check internal temperature of chicken. Cook until white meat is 160°F and dark meat is 175°F. Remove to paper towel lined rack and let cool for 10 minutes before serving.
