INGREDIENTS

  • 2 pounds Spanish mackerel (or other fish) fillets, fresh or frozen
  • 1 teaspoon salt
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 package (4/10 ounce) original ranch salad dressing mix
  • 2 cans (3 ounces each) French-fried onions, crushed

DIRECTIONS

  • Thaw fish if frozen. Preheat oven to 350 degrees. Skin fillets. Cut fillets into serving sized portions. Sprinkle with salt.
  • Combine sour cream, mayonnaise and salad dressing mix. Dip fillets into 1 cup salad dressing and roll in onions.
  • Place fish on a well-greased 15 x 10 x 1/2-inch baking pan. Bake in moderate oven, 350 degrees, for 20 to 25 minutes or until fish flakes easily when tested with a fork.
  • Serve with remaining dressing if desired.
