INGREDIENTS

  • 1 lb. okra, fresh or frozen, cut
  • 1/2 cup onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg, beaten
  • 1/2 cup water
  • 1 teaspoon baking powder
  • <1 pinch garlic powder, optional/span>
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • oil, for frying

DIRECTIONS

  • If using fresh okra, cut across the pod to form 1/4-inch thick disks. Discarding the pointed ends and the stalk ends of the pods.
  • Combine cut okra, onion, salt, pepper, water and egg and mix well. Place about 1/2-inch deep oil into a large skillet over medium-high heat.
  • Combine flour, baking powder, cornmeal and garlic powder. Add flour mixture to the okra mixture and stir to mix well and coat the okra with the flour mixture.
  • Reduce heat to medium. Drop about 1/4 cup portions into about 1/2" hot oil. Fry over medium heat until well browned on both sides. Drain on paper towels. Fry in batches if necessary.
