INGREDIENTS

  • 1 1/2 lbs. extra large shrimp, 21 - 25 per pound
  • 1 tsp kosher salt
  • 2 tsp coriander seed
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 clove garlic, minced
  • 1 1/8 tsp sugar
  • 1/8 tsp red pepper flakes
  • 1 Tbl + 1 tsp vegetable oil
  • 1/2 cup fresh cilantro, chopped
  • 1 Tbl lime juice
  • 3 Tbl roasted salted peanuts, chopped

DIRECTIONS

  • Peel shrimp, remove tail and devein. Place shrimp into a bowl and sprinkle with 1/2 tsp salt. Toss shrimp to coat with salt; set aside for 15 to 30 minutes. Place coriander and pepper into a mortar and pestle and gently break up the coriander seeds. Put the coriander, black pepper, garlic, 1 tsp sugar, 1/2 tsp salt and red pepper flakes into a bowl.
  • Place the shrimp onto a paper towel lined plate and blot the shrimp with more paper towels to get shrimp very dry. Transfer the shrimp to a large bowl and add 1 Tbl vegetable oil. Toss the shrimp to coat well. Sprinkle the shrimp with 1/8 tsp sugar and toss well. Place the shrimp in a single layer onto the bottom of a cold 12-inch skillet.
  • Turn heat to high. After about 3 minutes, the shrimp should be getting a little brown on the bottom and should be turning pink. Remove skillet from heat and turn the shrimp over in the skillet maintaining a single layer. All the shrimp to remain in the skillet to cook with residual heat for 2 minutes. Transfer the shrimp to a serving platter.
  • Return the skillet to high heat and add 1 tsp vegetable oil. Add the garlic spice mixture to the skillet and stir, cooking for about 30 seconds. Kill the heat and remove the skillet from heat. Add the shrimp back to the skillet, off heat. Gently move shrimp around in skillet to marry spice to the shrimp. Sprinkle the shrimp with cilantro and then add lime juice to the dish. Gently stir all ingredients together. Move shrimp to a serving platter and garnish with peanuts.
