INGREDIENTS

  • 6 medium potatoes
  • 1 medium onion
  • 3 slices bread
  • 1/2 cup diced celery
  • 2 tablespoons melted butter
  • 1 1/2 cup warm milk
  • 2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons minced parsley
  • 1/4 teaspoon saffron
  • 2 eggs, well beaten

DIRECTIONS

  • Pare and cut up potatoes; boil in water until soft. Chop onion; cut bread into cubes. Saute onion, celery, and bread cubes in melted butter.
  • Drain and mash potatoes.
  • Add onion, celery, bread cubes, warm milk, salt, pepper, minced parsley and saffron; beat well. Add eggs and blend thoroughly. Turn into a greased casserole.
  • Bake for 1 hour at 350°F. Serve immediately as accompaniment to meat or poultry.
