INGREDIENTS

  • 2 pounds red snapper fillets, cut into bite-sized pieces (any fish with a similar texture may be used)
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tomatoes, chopped
  • 3 fresh poblano chiles, roasted, peeled, seeded, and chopped or 1 can (7 oz) whole green chiles
  • Salt to taste

DIRECTIONS

  • In a skillet saute the fish in olive oil until tender and easily flaked with a fork.
  • Add onion and garlic and cook until soft. Add tomatoes and chiles and cook until soft. Check the seasoning and salt to taste, if necessary.
