INGREDIENTS

  • 1 can (20 oz) unsweetened pineapple chunks
  • 2 tablespoons cornstarch
  • 3 tablespoons sugar
  • 1/2 cup sliced almonds
  • 1 cup unsweetened shredded coconut
  • Sugar to coat

DIRECTIONS

  • Drain pineapple and reserve liquid. Cut pineapple chunks in half. Add water to the reserved liquid to make 3/4 cup.
  • In a saucepan combine liquid and cornstarch; stir to blend. Add sugar and pineapple chunks; bring to a boil over medium heat, stirring constantly. Reduce heat and simmer until thickened.
  • Stir in almonds and coconut. Cool.
  • Use as a filling for Empanadas. Roll Empanadas in sugar while still warm.
