INGREDIENTS

  • 4 pita breads, preferably whole-wheat
  • Small jar of pasta sauce
  • 8 ounces mozarella cheese, sliced or grated
  • Dried oregano or thyme, to sprinkle
  • salt and freshly ground black pepper
  • 1 small red onion, thinly sliced and lightly fried
  • Mushrooms, sliced and fried
  • 1 can (7 ounces) corn, drained jalapeno chilies, sliced
  • Black or green olives, pitted and sliced
  • Capers, drained

DIRECTIONS

  • Prepare two or three toppings of your choice for the pizzas. Preheat the broiler and lightly toast the pita breads on each side.
  • Spread pasta sauce on each pita, right to the edge. This prevents the edges of the pita from burning.
  • Arrange cheese slices or grated cheese on top of each pita and sprinkle with herbs and seasoning.
  • Add the toppings of your choice and then broil the pizzas for 5-8 min until they are golden brown and bubbly. Serve immediately.
