INGREDIENTS

  • 2 cups pomegranate juice
  • 1/4 cup granulated sugar
  • 1 tsp dried crushed chilies
  • 4 4 - 6 oz chicken breast, boneless and skinless
  • 1 tsp cooking spray
  • 1 tsp garlic powder
  • 1 tsp cumin, ground
  • 1 tsp ginger, ground
  • 1 cup arugula leaves, lightly packed

DIRECTIONS

  • Combine first 3 ingredients in a saucepan. Gently boil on medium heat until reduced to about 1/2 cup. Reserve 1/4 cup.
  • Set up grill to have medium heat.
  • Spray chicken with cooking spray. Combine next 4 ingredients and rub over chicken. Grill chicken on direct medium heat for about 6 minutes per side, brushing occasionally with remaining pomegranate mixture, until internal temperature reaches 170°F.
  • Arrange arugula on a serving plate and top with chicken. Drizzle with reserved pomegranate mixture. Serves 4.
