INGREDIENTS

  • Unsalted butter, for the pan
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • Pinch kosher salt
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup poppy seeds
  • 1/2 cup canola oil

DIRECTIONS

  • Heat oven to 350°F and place a rack in the center of the oven. Butter an 8 1/2 x 4 1/2-in. loaf pan and place the pan on a baking sheet.
  • In a bowl, whisk together the flour, baking powder and salt.
  • In a large bowl, whisk together the sugar, sour cream, eggs and vanilla. Gently whisk in the poppy seeds, then the flour mixture.
  • Using a rubber spatula, fold in the oil. Transfer the batter to the prepared pan and smooth the top. Bake until a wooden pick inserted into the center comes out clean, 50 to 60 minutes.
  • Transfer the pan to a cooling rack and let cool for 5 minutes. Run a knife between the cake and the sides of the pan to loosen, then turn the cake out onto the rack and let cool (rightside up) completely.
