INGREDIENTS

  • 1 1/2 lbs. red potatoes
  • 1/3 tsp salt
  • 1/3 cup mayonnaise
  • 2 tsp pickle relish
  • 1 tsp prepared mustard
  • 1/8 tsp celery seed
  • 1/8 tsp black pepper

DIRECTIONS

  • Potatoes may be peeled or skins left on. Cut potatoes into 1-inch chunks.
  • Place potatoes into a pot and add just enough water to cover. Bring potatoes to a boil and boil until just fork tender.
  • While potatoes are boiling, combine remaining ingredients in a bowl and stir to mix well.
  • When potatoes are done, place in colander and drain. Rinse well with cold water to stop the cooking process and to cool the potatoes some. Pour the mixture of other ingredients over the potatoes and using a large spoon, gently toss the potatoes to coat well. Place the potato salad into the refrigerator to chill completely.
