Rosemary Potatoes Recipe uses rooster potatoes cooked as if they are being served in a fancy restaurant. Wonderful use of rosemary makes a very tasty, yet very easy dish in creating this roasted potato recipe.

INGREDIENTS

  • 1 lb. rooster potatoes
  • Olive oil
  • Salt to taste
  • Pepper to taste
  • Ground rosemary, for sprinkling

DIRECTIONS

  • Preheat oven to 400° F. Toss potatoes in olive oil.
  • If necessary, cut potatoes lengthwise to the approximate size of a golf ball. Place on a tray. Sprinkle with fresh or dried rosemary, salt and pepper.
  • Turn halfway through cooking. Cook around 45 minutes or until golden brown and soft in the middle.
