INGREDIENTS

  • 1 1/2 lb. butternut squash
  • 1 medium onion, sliced thin
  • 1 large clove garlic, minced
  • 2 Tbl. olive oil
  • Kosher salt to taste
  • Ground black pepper to taste
  • 1/2 cup Parmesan cheese

DIRECTIONS

  • Preheat oven to 450°F. Peel the butternut squash and cut in half lengthwise. Scoop the seeds out of each half. The squash must be shredded. It is most easily shredded using a food processor but a box grated will also suffice.
  • Once the squash is grated, place into a bowl and add the onion. Mix well. Add additional ingredients stirring well after each addition.
  • Pour the squash mixture into a 9 x 13 inch baking dish. Spread the squash mixture over the bottom of the baking dish making an even layer of squash mixture over the bottom of the baking dish.
  • Place the baking dish with squash onto the middle rack of the preheated oven. Bake for 13 - 15 minutes. Remove the dish from the oven and turn the oven to broil. Once broiler has heated, return the dish to the top rack of the oven and broil for 2 - 3 minutes. Remove from the oven and serve.
