INGREDIENTS

  • 4 chicken breasts (2 whole breasts split)
  • salt and pepper
  • light cream or evaporated milk
  • flour
  • butter or margarine
  • parchment paper

DIRECTIONS

  • Sprinkle breasts with salt and pepper to taste.
  • Dip breasts in cream or milk; roll in flour and sauté in butter or margarine until golden brown.
  • Arrange sautéed breasts in a baking pan. Dot with 2 tablespoons butter or margarine.
  • Cover with parchment paper and bake in moderate oven (375°F.) 20 minutes or until juices run clear.
