INGREDIENTS

  • 2 - 2 1/2 lb. pork tenderloin
  • 2 cups onion, chopped medium
  • 1 cup celery, chopped medium
  • 1 cup carrot, chopped medium
  • 2 Tbl. olive oil
  • 1 tsp. Italian seasoning

DIRECTIONS

  • Combine the mirepoix of onion, celery and carrot with the olive oil.
  • Remove and fat or silver skin from the tenderloin. Place the tenderloin in a 9 x 13 inch glass casserole dish. Pour the mirepoix over the tenderloin. Turn the tenderloin over and cover with the mirepoix. Cover the casserole dish with plastic film and place in the refrigerator to marinate. Marinate the tenderloin for at least 8 hours, turning occasionally, and up to 24 hours. If the olive oil congeals, set the tenderloin out at room temperature until the olive oil liquifies.
  • Preheat oven to 400°F. Remove the tenderloin from the mirepoix and remove all mirepoix from the tenderloin. The same casserole dish may be used to bake the tenderloin but all mirepoix should be removed from the dish.
  • Place the tenderloin into a baking dish. Lightly sprinkle both sides of the tenderloin with Italian seasoning. Place the tenderloin into the preheated oven on the middle rack. Bake for 25 minutes and check the internal temperature with a thermometer. If the tenderloin is not at 165°F, return to the oven and bake in 5 minute increments until the internal temperature reaches 165°F. Let the tenderloin rest for 10 minutes before slicing and serving.
