INGREDIENTS

  • 1 egg
  • 1 1/2 cups milk
  • 1/2 cup fine dry bread crumbs
  • 1 teaspoon each salt and sugar
  • 1/4 teaspoon each ground ginger, nutmeg, and allspice
  • 1 pound ground lean beef
  • 1/2 pound ground pork
  • 1 small onion, finely chopped
  • 1/4 cup butter or margarine
  • 1 tablespoon flour
  • Chopped parsley, for garnish

DIRECTIONS

  • In a large bowl beat egg with 1/2 cup of the milk. Blend in bread crumbs, salt, sugar, and spices. Thoroughly mix in ground meats and onion. Shape into meatballs about the size of walnuts.
  • In a large, heavy frying pan, brown meatballs well in heated butter or margarine. As they brown, remove them to a heated dish in a 250° F. oven to keep warm.
  • Pour off all but about 1 tablespoon of the fat. Cook flour in same pan, stirring, until bubbly and lightly browned. Gradually mix in the remaining 1 cup milk, cooking until thickened and smooth. Salt to taste. Return meatballs to pan, cover, and simmer 15 minutes. Sprinkle with parsley.
