INGREDIENTS

  • 1/2 lb. fat pulled from the cavity of a whole chicken
  • No seasonings

DIRECTIONS

  • Chop the fat coarsely, place in a 1 to 1 1/2-quart saucepan over low heat, and cook until most of the fat is melted and only a few crisp solids remain. Strain them out, and the fat is ready.
  • Note: You'll get about 1 cup from 1/2 pound of chicken fat.
