INGREDIENTS

  • 1 pound peeled, deveined shrimp, fresh or frozen
  • 1/2 cup butter or margarine
  • 1 cup chopped green onions and tops
  • 1 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 cloves garlic, finely minced
  • 1 package (8 ounces) sliced ham, cut into small pieces
  • 1 can (28 ounces) chopped tomatoes and liquid
  • 1 can (6 ounces) tomato paste
  • 1 cup water
  • 2 chicken bouillon cubes
  • 1/2 teaspoon basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon liquid hot pepper sauce
  • 1 1/2 cups hot cooked rice

DIRECTIONS

  • Thaw shrimp if frozen. Combine butter, onions, celery, green pepper, garlic and seasonings in 3-quart bowl. Cover and cook in microwave oven on high 12 minutes, stirring occasionally during cooking.
  • Add ham, tomatoes, tomato paste, water and shrimp. Cover and cook on high 16 minutes, stirring occasionally during cooking.
  • Place 1/4 cup rice in each of 6 soup bowls. Fill bowls with jambalaya.
