INGREDIENTS

  • 1 lb. shrimp, peeled and deveined
  • 4 Tbl butter
  • 4 Tbl olive oil
  • 2 shallots, minced fine
  • 2 garlic cloves, minced fine
  • 1/2 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 cup white wine
  • 1 lemon, juice of

DIRECTIONS

  • Place butter into a large skillet over medium heat and allow butter to melt but not brown. Add the olive oil and stir well. Allow the mixture to begin to shimmer.
  • Add the shallots and garlic and saute until shallots begin to soften. Add the pepper flakes and the salt. Stir well to combine all ingredients well.
  • Increase heat to medium-high. Add the wine and the lemon juice stirring to mix well. Allow all to come to a boil. Reduce heat to medium and cook until liquid has reduced by 1/2.
  • Add the shrimp to the skillet and space the shrimp in a single layer. Cook until skillet side of shrimp has turned a deep orange. Turn the individual shrimp over and cook until second side is orange. Do not overcook the shrimp or they will become tough and lose their flavor. When both sides of the shrimp are orange, remove from skillet and serve. The liquid in the skillet makes an excellent dipping sauce for the shrimp.
